"Acetaldehyde diethyl acetal is used in alcoholic beverages, Citrus Fruits, Dairy Products and Tropical Fruits It has a nutty flavour which is particularly useful for replacing Acetaldehyde in citrus flavours.

The aroma of ethyl acetate is most vivid in younger wines and contributes towards the general perception of "fruitiness" in the wine. Too much ethyl acetate can diminish the quality of the wine, although a small amount of the ingredient can give wine a distinct flavour.
